Sourcing, seasonality, and care of Dominica’s natural resources is inherent in every meal created at Secret Bay. To cook with this amount of considered focus on local sourcing requires trust in the Nature Island’s land and sea, and the community who know them best. It requires valuing proximity and personal relationship over convenience. 

Flavor defined by landscape

Dominica’s natural abundance comes from the rich soil, lush climate, and waters teeming with marine life. All ingredients sourced and served at Secret Bay carry the imprint of where they are grown and how they are gathered.

At eco-luxury resort Secret Bay, guests can relish unique, flavorful offerings from three separate onsite restaurants. Bwa Denn offers a casually gourmet experience with hyperlocal ingredients, a rotating nightly menu, tapas offering, and craft kombucha brewery. 

At the exclusive restaurant experience at Zing Zing, there’s a nightly six-course discovery menu that changes daily depending on the seasons, creativity, and ingredient-related precision, offering an intimate, personalized experience with gorgeous views over the ocean. 

At Botanica, guests can revel in Secret Bay’s homegrown organic produce, with an outdoor chef’s table experience designed to showcase the island’s homegrown delights. 

At all of our restaurants, you’ll encounter incredibly delicious fish, fruits, and herbs that you haven’t tasted before. Breadfruit and plantains are staples, passionfruit and guava bring brightness, and cacao and lemongrass thrive in the island’s warmth. These vibrant flavors will stay with you after you depart. 

Availability shifts with the seasons, weather, and harvest, and this is what gives the cuisine at Secret Bay its character. Each meal cannot be recreated elsewhere, reflecting a moment in time that only you get to experience.

Secret Bay’s three restaurants rely on the hotel’s longstanding connection to Dominica’s farmers and those who work the land. Many operate on a small scale, tending to their land with methods shaped by experience and care.

Ingredients are sourced frequently, often daily, ensuring the fresh produce that arrives in the kitchen is always at its peak. This proximity allows for an immediacy that can’t be planned – the harvest determines the flavor. 

Secret Bay’s own garden supplements Dominica’s bounty and guests can walk its paths, seeing firsthand how ingredients are grown and gathered. They can even try their own hand at relishing the Nature Island’s bounty themselves at one of Botanica’s thrice weekly intimate cooking classes. Guests work closely with knowledgeable, creative chefs to craft personalized farm and sea-to-table menus, experiencing the magic of the unique local ingredients with their own senses.

Out on the water, the day begins early. Fishing in Dominica is guided by conditions that change from one morning to the next. One day may bring mahi mahi, the next lionfish, and snapper.
