Dining Overview

Wouldn’t it be a luxury to eat fresh, locally-grown food every day? At Secret Bay, we stand by a healthy, sustainable diet, and wouldn’t dream of serving you any other way. Which is why each meal is prepared on-site by a private chef before being personally delivered to you.

Love Cooking? Each villa and bungalow has a fully-equipped kitchen designed for just that. We can help you source local produce or you can have fun discovering exciting foods at the wonderful daily markets at Portsmouth or Roseau – Saturdays are particularly special with its bounty of fruits and vegetables. Better yet, sign up for one of our personalised cooking classes where one of our chefs brings the traditional Dominican cuisine straight to you, along with a fun and relaxing way to hone your culinary skills.

With every fruit tree native to Dominica growing on the Secret Bay property – from guava to pineapple, sweetsop to breadfruit and coconuts with their thirst-quenching water and jelly – it’s a feast for your senses. The gardens on the property are also bursting with a variety of wild herbs – great for seasoning your freshly-caught Mahi mahi or Kingfish or for brewing up a refreshing pot of herbal tea.

That’s what Secret Bay is all about: revelling in nature, engaging with our community and remembering to enjoy the simple things in life like sipping freshly-squeezed mango juice for breakfast, and watching birds pecking on the crumbs of home-baked bread.

Personal Chef

A number of renowned Dominican chefs are available to come to your villa or bungalow and prepare a fantastic meal – an ‘a la carte’ just for you. To celebrate a special occasion or just for the pleasure of experiencing fine dining in your own beautiful al fresco terrace, we bring the pleasures of the restaurant to you.

You are also more than welcome to watch the masterchef as they prepare and cook your food – picking up tips about their special blend of Dominican and international cuisine that you can take back home with you.

Enhance your dining experience with a private musical accompaniment – ask your villa attendant for details.

Pre-stocking of your villa or bungalow for your arrival can be arranged with your favourite foods (where available) as well as a wide selection of locally-grown organic produce.

Organic Food Baskets

Baskets of fresh organic homemade food can be delivered straight to your villa or bungalow. In Dominica “organic” goes without saying – eating healthily and looking after the land is a natural way of life here. Perhaps that’s one of the reasons that Dominica has one of the highest number of centenarians in the world.

Options include:

Chef’s basket – For those of you who fancy doing some cooking: A 3-day supply of seasonal fresh fruits and vegetables, just-squeezed tropical juice, homemade snacks including our very special Secret Bay Granola, yoghurt, home-baked bread, local jams and jellies as well as a lovely variety of local teas and coffee.

Breakfast basket – For yummy breakfast and snacks: A 3-day supply of tropical fresh fruits, just-squeezed tropical juice, a selection of yoghurt and sorbets, home-baked bread, local jams and jellies and our delicious homemade Secret Bay Granola as well as a lovely variety of local teas and coffee.

The Souce Shack

On the way to one of our two secluded beaches, Tibay, is The Souce Shack. Souce (meaning “source” in Dominican Creole) is our very own chef’s kitchen where all of the cooking at Secret Bay takes place and, like all great kitchens, doubles as the perfect spot for connecting with others. With a companion or fellow traveller by your side, witness the unique tastes of Dominica being prepared as you recount your days adventures. Being one of only a handful of communal spaces located on the lush property, The Souce Shack is a unique culinary experience all its own, a place to foster connections beyond the privacy of your villa or bungalow. Socialize with other guests and staff, or attend one of our informal gatherings that we can be found facilitating. Fresh juice in hand, easy chatter and the sun setting out to sea: this is relaxed sophistication, Secret Bay-style.

The Local Cuisine

If you want to get more of a taste of local culture, there are many lovely restaurants to explore both down the road in Portsmouth as well as a little further afield across the island.

Just tell our concierge what you are after and she will happily make a reservation for you.

Cooking Classes

We also offer cooking classes: one of our cooks will come to your villa and bungalow and teach you traditional Dominican dishes made with the many local tropical ingredients. A fun and relaxing way to engage with a very important part of our local culture.

And you can enjoy the fruits of your labour by tucking into the meal you have created on your private villa or bungalow terrace.

Private Dining at Secret Bay

And Music to Entertain You…

For a little light evening entertainment, we are happy to arrange for a private one-man jazz concert or acoustic performance. Performed in the privacy of your villa terrace or at one of Secret Bay’s open decks, it’s the perfect accompaniment to an intimate dinner or wine tasting.

The brilliant Robert Armstrong James – a veteran jazz musician and star of the local jazz scene – will serenade you under the stars in an intimate evening you will remember forever. Or, choose to sway to the rhythm of classical guitarist Tyson Johnson. You may even catch an occasional guest appearance, including his talented daughter accompanied on flute.
