Zing Zing Returns to Secret Bay as the Caribbean’s Most Intimate Dining Experience

When we first opened Zing Zing, its canopy-style roof above Tibay Beach quickly became one of the most talked-about dining settings in the Caribbean. The open-air space, the display kitchen, the no-menu concept. It was different from anything else on the island and possibly across the Caribbean, and guests responded. Zing Zing became synonymous with Secret Bay itself.

Then came Bwa Denn. When we introduced our new cultural and culinary space, we wanted to give it our full attention. Bwa Denn brought a lot that was new to Secret Bay: two distinct dining experiences in Kitchen and Terrazza, a full-service bar, a microbrewery crafting kombucha with local fruits and herbs, a cutting-edge wine cellar, an art gallery housing 100+ Caribbean and Latin American works, a boardroom, and a shoppe featuring local crafts and resortwear. It was a significant expansion of what Secret Bay offered, and we decided to pause Zing Zing so our team could focus on bringing it all to life in our best way.

Now, with Bwa Denn well established and our villa collection grown to 27, we are excited to welcome Zing Zing back. And it is better than before.

A More Intimate Experience

The most significant change is scale. Previously, Zing Zing served as our primary restaurant and did not limit the number of guests per evening. Now, we have limited Zing Zing to just twenty guests per evening. This is deliberate. At this size, the chef can visit every table, introduce every course, and share the provenance of every ingredient. The evening becomes a conversation, not just a meal.

Meet Chef Allison Lo

Leading this new chapter of Zing Zing is Chef Allison Lo, originally from Sabah, Malaysia, known as the Land Below the Wind. She began cooking at seventeen, and her career has since taken her through kitchens in the Maldives, Qatar, and the Seychelles. Each destination shaped her global perspective and strengthened a core belief: exceptional cuisine begins with understanding and honouring the land.

At Zing Zing, Chef Allison’s approach is grounded in Dominica’s abundance. Rather than imposing a fixed style, she allows the island’s ingredients to guide the plate. Her cooking is defined by precision, restraint, and intention. Beautiful produce is handled with care, flavours remain honest and balanced, and technique is applied with discipline to elevate the natural character of every ingredient. For Allison, integrity in the kitchen is non-negotiable. Every dish is created with purpose, respect, and passion.

The Discovery Menu

Our no-menu concept has evolved into what we now call the Discovery Menu, and expanded from four courses to six. Each evening, Chef Allison creates a tasting journey built entirely around what the island has to offer that day. Fresh-caught seafood from Dominican waters. Seasonal fruits, vibrant vegetables, and fragrant local herbs gathered from nearby farms and our own organic gardens. The direction of the evening is dictated by availability, creativity, and precision, allowing exceptional produce to lead.

This is what a Discovery Menu means in practice: guests surrender decision-making to the kitchen and trust it to take them somewhere unexpected. Chef Allison sources ingredients that morning, builds the evening’s narrative around what she finds, and then delivers it course by course with explanation and context. It is experiential dining in the truest sense. Every evening at Zing Zing is different: a refined, immersive expression of the island in that moment.

Handcrafted Cocktails & Wine

A new feature of the Zing Zing experience is a curated drinks programme. Three handcrafted cocktails are created each night using the freshest local ingredients, reflecting the same daily-driven philosophy as the cuisine. A thoughtfully selected wine flight is also available, designed to elevate and harmonise with each course. For those who wish to explore further, our extensive wine selection includes the Grand Cave, Secret Bay’s collection of premium vintages ranging from $300 to $2,000 per bottle.

The Same Iconic Setting

The space itself has not changed, and that is by design. Zing Zing’s canopy-style open-air structure above Tibay Beach remains one of the most striking dining environments in the Caribbean. The views stretching across the sea. The breeze. The sound of the water below. The display kitchen where the craft is visible. A private dining room for more intimate gatherings. What has changed is the energy. With fewer guests, a dedicated team of specialists focused on elevated service, and a chef who moves through the room as a storyteller, the atmosphere is more personal and intentional than ever.
