Land- and Sea-to-Table, Chef-Driven, and Menuless: Dining at Secret Bay

This is story six of nine in Secret Bay’s 15th anniversary series. The full series is here.

From Secret Bay’s inception, how guests dine and drink here has been intentionally shaped by the abundance Dominica offers, from the morning’s catch and the farmers’ harvests to what the kitchen forages itself, and by the traditions of the people who have cooked this way for generations.

15 years later, that approach has evolved into one of the most well-considered culinary programs in the Caribbean, expressed across many distinct dining experiences, a living organic garden, and local fruits and herbs grown on the property. Learn all about Secret Bay’s dining experiences here.

Zing Zing: The Caribbean’s Most Intimate Reservation

Zing Zing, Secret Bay’s acclaimed open-air fine dining restaurant, sits above Tibay Beach beneath a canopy-style open-air roof. Limited to just 20 guests per evening, it’s an exclusive and intimate experience where each meal becomes a conversation.

At the helm is Chef Allison Lo, originally from Sabah, Malaysia, whose career has taken her through restaurants in the Maldives, Qatar, and the Seychelles. Chef Lo crafts each evening’s six-course Discovery Menu around what the island offers, with the direction determined by availability and her culinary judgment. Each night is a different culinary narrative, a refined and immersive expression of Dominica that changes each day. She converses with each table to introduce each course and share the ingredient provenance.

Bwa Denn: All-Day Dining, Art, and the Brewery

Bwa Denn, a two-level pavilion, is Secret Bay’s all-day dining destination. The ground floor is home to Bwa Denn Kitchen, a casual gourmet restaurant open daily from breakfast through evening, drawing on the same land-and-sea sourcing philosophy that Secret Bay was founded on. There’s a full-service bar and a kombucha microbrewery producing small-batch ferments from local fruits and herbs, sitting alongside an art gallery housing over a hundred works of contemporary Caribbean and Latin American art. On the rooftop terrace, the Terrazza, a signature adults-only no-menu concept invites guests to surrender to the culinary expertise of Secret Bay’s chefs, working with local ingredients and individual preferences. The wine cellar houses one of the largest collections of bottles in the Caribbean. Whichever option you choose, Bwa Denn invites guests to linger over food, art, and the view.

Botanica: The Organic Garden and Chef’s Table

Botanica sits along the Cario River, an outdoor culinary space centered around an organic garden planted with locally sourced seeds, plants, and saplings. At the Chef’s Table, guests have the special experience of eating omakase-style, enjoying dishes with produce harvested directly from the garden surrounding them.

Cooking classes are offered three times weekly, with plant-based, pescatarian, and omnivore menus built around traceable organic ingredients either foraged from the property or sourced from nearby farms. Guests can even join the chefs on foraging excursions before the class begins. Forbes has recognized Secret Bay’s culinary approach as a global leader in sustainable food tourism, and Botanica is the clearest expression of why.

In-Villa Dining

Perhaps the most intimate dining at Secret Bay is in-villa. Just one word to your dedicated villa host and they’ll take care of all the dining details needed for you to enjoy breakfast, lunch, or dinner in your private villa, from setting the table to cocktails on your deck to personalized menus prepared by a chef in your villa’s own kitchen. You can even take a private cooking class to learn how to prepare your favorite Secret Bay delicacies at home. And every morning, you’ll love the Organic Breakfast Basket delivered right to your villa, overflowing with farm-fresh eggs, organic fruit, homemade granola, yogurt, bread, jam and dried fruit, plus coffee beans, local lemongrass, and cocoa teas.

Special Experience Dining

Dining at Secret Bay extends well beyond the restaurants, with intimate al fresco experiences set against some of the resort’s most memorable backdrops. Guests can dine on the deck at Gwiyavye Heights, gather for a beach bonfire by the sea, or enjoy dinner on the Sunset Deck as the sun dips below the Caribbean horizon.

For something even more secluded, a picnic can be arranged at Secret Beach, accessible by kayak, paddleboard, or skiff through a hidden sea cave. Each experience can be arranged by your villa host and is shaped by the same seasonal, locally sourced approach found throughout Secret Bay’s culinary program.

Dominica’s Culinary Traditions

The Nature Island is one of the most fertile places in the Caribbean, and Secret Bay’s kitchen treats this natural bounty as its primary resource.

Rather than relying solely on fixed menus, Secret Bay’s kitchens, bars, and in-villa dining service work with what the sea brings in each morning, what the organic garden yields, and what the farms nearby have ready that week. The food offerings at our resort range from menuless to omakase-style to seasonal menus, depending on guest preference.

Sourcing here is hyperlocal by design, with seafood arriving daily from Dominican fishermen working the waters off the northwest coast. Produce is sourced from the network of small farms that surround the property. Herbs, spices, and forageable ingredients are grown in the resort’s own organic gardens and the land itself.

Secret Bay’s relationships with farmers and suppliers are longstanding and deliberate, reflecting a broader commitment to supporting the communities and agricultural traditions that make Dominica’s food culture distinct. Kalinago culinary knowledge and indigenous ingredients also inform the cooking too, connecting the kitchen to the island’s deepest roots. The result is food that is traceable, seasonal, and genuinely of this place.
