Try it at Home – Secret Bay’s Vegetarian Chana Masala

We look forward to serving you on your next stay with us, but in the meantime, we caught up with Chef Eric to give you an exclusive vegetarian Souce Shack recipe to try at home.

Chana Masala Recipe

Ingredients

  • 4 cups Cooked Chickpeas
  • 1 ½ Medium Onion
  • 6 Cloves Garlic
  • 1 Pinky Length of Ginger  
  • 1 Medium Carrot
  • 2 Medium Tomato
  • 1 Tsp Cinnanamon
  • 2 Tsp Fennel Seed
  • 1 Tbsp ground cumin
  • 2 Tsp ground coriander
  • 1 Tsp cayenne powder
  • Salt & Pepper to taste
  • 2 tbsp garam masala
  • 1 tsp cardamom
  • 2 tsp black pepper
  • 2 Bay Leaf
  • 1 Tsp Mustard
  • 1 Tsp Tumeric
  • 2 Tbsp Curry Powder
  • 1 Tbsp Paprika
  • 1 Tbsp Chili Powder
  • 2 Cups Coconut Milk
  • 3 Cups Water
  • ½ Cup Fresh Cilantro chopped

Method

  1. Puree onion, garlic and ginger with ¼ cup olive oil in blender or food processor
  2. In large saute pan, bring 2 Tbsp olive oil to near smoking over high heat
  3. Add tomato and saute till slightly caramelized
  4. Add puree onion, garlic, ginger and saute till just fragrant
  5. Add chickpeas and all spices and saute for three (3) minutes over medium heat
  6. Add coconut milk and water and simmer until reduced by half
  7. Season to taste with salt, pepper and sugar
  8. Stir in cilantro
